We really don't know which will perform better in real world applications, using real world chipsets, etc. But DDR 2100 has lower latency and higher burst bandwidth than Rambus 800, while Rambus 800 has better sustained bandwidth.

You might take notice of the near universal adoption of DDR over Rambus for servers - systems that are very demanding of memory performance.
