John, if INTC wanted to make server appliances, they would not need to build server farms to do that. As far as margins are concerned for server farms, think of INTC's move as similar to those of WalMart and Home Depot. They stepped into low margin markets and built efficient infrastructure to decrease capital costs per dollar revenue, thus increasing margins, undercutting the competition, and maximizing revenues. One thing INTC knows how to do is build infrastructure. Those fabs they build are something else. The other thing they understand is "process".
