I have never scaled a fish as I filet what I catch. And I have cleaned a bunch of them. I was the designated fish cleaner on trips to Canada.

Same with field dressing game. I've seen guys who have hunted for years stand looking at a dead deer without a clue.

Tip on pheasants... if you're going to freeze them remove the lower legs, wings, head, tail and guts. That's it. Leave the skin and feathers on. No freezer burn or drying.
