I know which parts you mean, the "oysters"! None of the suggestions I had are difficult to make, although they do require a bit of time. I shall be fixing several over the weekend, so if you and anyone else would be interested in recipes, let me know and I shall post them. Also remember an old-fashioned mushroom barley soup? That starts with a stock made from a turkey carcass. And if the turkey is sufficiently tender, one can use it in a lovely recipe normally used for chicken--gratin of chicken hash--or in a gumbo.
