That reminds me of something my husband's Grandmother used to do. Whenever we had a family dinner and there was a very sweet dessert, she would follow it with a small piece of plain bread "to get the sweet out"....

I agree with you about the chocolate, too. My daughter brought some chocolate back from Paris last year that was wonderful. Like you said, very dark, not too sweet, and a little bit went a very long way! I'm not sure where she bought it, but if I can find it online, I'll let you know....Or I could just use that as an excuse to go to Paris<g>

Have you tried doing a search to see if you could find the recipe? I ask because I remember seeing a recipe for a chocolate soufflé, a specialty of a restaurant that had long before closed, in a New York Times magazine. Maybe the recipe for the chocolate is still around too.
