What happens to the quick-dry when someone bumps the solid-appearing wall later, say while moving furniture? My guess is that it cracks, all around the square of drywall that's just hanging by quick-dry.

If you say so but this seems rather flimsy to me..No quick patch that I know of is also a glue.And even if so you're talking a pretty small gluing surface, Most places I work in are pretty nice homes and they want lasting jobs. I don't need any call backs.
