OT Usually they are not marketable and have all kinds of restrictions on them. Anyone know if an employee with dim unvested options can buy puts on the open market to protect them?

I'm not an options guy, but I think this answer is correct. The fact that your employee options are not marketable has nothing to do with your ability to hedge them by taking a market position in listed put options.
