Right, but you're leaving out the important step. It's the study of the principles of "critical interpretation and/or explanation." Think of critical interpretation as a tool, say a shovel, for digging out meaning. Hermeneutics would be the study of the WAY to dig out meaning, or maybe the study of the proper shovels, or how to make and use these shovels. An archeologist digs a site, but first the archeologist is trained in the principles of site-digging.

In a round-about way, but my unabridged Webster's Third International Dictionary says it directly derives from Hermes Trismegistus, aka Thoth, the Egyptian god of wisdom, "fabled author of a number of mystical, philosophical and alchemical writings." The Greeks identified Thoth with Hermes.
