I thought that had to do with fecal contamination of the meat- something like that, plus you have to bleed a carcass right away, right?

I have an old cookbook- REALLY old- that talks about all that stuff- it has recipes for meats I didn't know WERE meats.

It is legal to pick up road kill here if you are the one who hit it.

Gutting it quickly has to do with cooling the carcass for better tasting meat. In cool weather you can wait 24 hours before gutting a deer but I want to be waaayyy up wind when the knife is stuck in.
