but full color would require about 2Gbps or more.

Pretty much all video is encoded. A 10Mbs stream gives you a very high quality picture (on the order of studio broadcast). The quality of a well worn VCR tape (like you usually get at the rentals stores) can be achieved with as little as 1Mbs.

Of course with any encoding systems it depends on the pictures itself and "quality" is subjective.
