The Canadas I've shot I've had cleaned soon after. That makes a difference. A tame duck will dump about a pint of greese on a grill. Icky poo. A wild Canada has the exact same fat to protien as a filet mignon. Greasy isn't even thought of. Wild goose is a very good meat, wild duck also.

As they do. In my yard we have Giant Canadas, Herons, both great blue and little green plus egrets. They eat fish and the geese eat greens.

I eat goose for Christmas. It is richer than duck, has more meat (although still far less than turkey), and takes stuffing very well. We use an apple and sausage stuffing. The grease is about proportional to duck, and flows out of the bird efficiently if one is careful to pierce the skin all over with a fork........
