256M could be made up of 2 128M RIMMS but then a) the pricing model wouldn't work (the funky incremental pricing), and b) you'd be filling up both RIMM slots and you'd have to throw away a RIMM to upgrade after that. It makes more sense to me that a 128M RIMM is "priced" at $940 and 256M at $1420 since you get some economies of scale, and that Dell would rather do 256M with the less expensive configuration.

As for the $940 and $1420 pricing, Dell may be a price leader for overall system price among the "big guys", but is definitely not the price leader when it comes to add-ons and extras. Check their catalog and on-line site against most other catalogs/on-line sites and you'll see. I'm sure they're using add-ons to increase margins. As Jdassoc has posted, you can get RIMMs a lot cheaper.
