many variables such as the same option trading concurrently on different exchanges at perhaps different bid/ask....market maker, trader, specialist whatever, will if possible match buyer and seller so they can in essence stay out of the transaction....the fast moving market compounds the variables. bid/ask can be moved to match orders on the books...basic supply/demand,which translates into implied volatility, similar to how the underlying common price is adjusted. consider a market order...you don't know what the market is until the order is executed, no guarantee you'll execute at posted bid/ask...
