Harry.... Ahem, first a point of Louisiana etiquette. We simply NEVER EVER spell (or pronounce) the name of those marvelous mudbugs as crayfish! They are crawfish!!! Unfortunately, it is a very bad year for mudbugs. The drought we have experienced has decimated this year's crop. Prices are about twice as high as normal and the supply is of very uneven quality. In fact, I have not been to a boil this year at all. Commander's is wonderful. Had dinner at Antoine's last month -- also great.
