Joan, a 100% premium for high protein wheat, times have changed alright. In the early 80th, we came up with a device for the rapid determination of protein (at the elevator and within minutes) in wheat, but when the general price of wheat dropped below about $3/bushel (if memory serves), the incentives paid for high protein contracted so much that the device's payback was not rapid enough. What are you growing near Red River, semolina as they used to some 20 years ago? I think that the premium on semolina is not just due to its high protein, but is more intrinsic (pasta sells for much more than bread?).

I do not remember premiums of 100% in those time and if memory serves, the whole range was between 10% protein in low grade wheat to 14% in the best semolina's.
