I hate sliding walls. They're never truly soundproof, and invariably look cheesy to boot. So I'd pick the conference center with fixed walls instead...

What if you had 1000 people for a presentation (say a keynote address) and the largest fixed room fit only 300? Sitting on the floor isn't fun. Of course, if the speaker is booring, one can always take a nap if you are on the floor..... ;-)
