Use the Pentium III-600 over the Celeron without question.

I've used, and setup both kind of boxes, and although the Celeron is fine for a low-end workstation using basic Office applications and some web-surfing, the applications and OS you are running would benefit a great deal from a Pentium III with the full 512k cache.

How much RAM do you have? Although 64Mg is the minimum for a Windows 2000 Pro install, I recommend at least 128Mg. You'll also need to look at the bus speed of the CPU you are planning the purchase... All Celeron's run at 66Mhz, and Pentium III's will run at either 100Mhz, or 133Mhz. You'll have to make sure that your current RAM is PC100 if you want to run a Pentium III.

All in all, go with a Pentium III-500Mhz and above, but anything above 650Mhz is overkill IMO. RAM is much more important... Go with 256Mg if you can.
