Try the simplist method first.

Assuming you have a good control of the basic swing. IOW... you have a solid fundamental setup position, you swing the club inside out.... etc. Then the first suggestion you made is the proper one, opening the stance. The most likely cause for you miss hitting the shot when you open your stance is you only opened the lower body. Be sure to open your shoulders so they are in the same line as your knees.

The next step is to make sure the clubhead does not turn with the body when you adjust the set up. Leave the club aimed at the target as if you are going to hit a straight shot.

Since the body is open to the target line the ball placement position may need to be adjusted. Go to the practice range and work this set up with your 6 iron. See what moving the ball back (most likely fix) and forward do to the quality of the impact.

If opening the body does not solve the problem then the next best suggestion is just play the draw, IMO. ;-)
