Much of modern scientific theory is based on mathematical contrivance. The Fourier series of electromagnetic standing waves that combine to form a "wave packet" is such a contrivance. It is just a model to explain things in our own minds. There is no such thing as how things "really" work. A completely different model would be equally valid if it could not be contradicted. Everything must not be observed. At any rate, the "quanta" of energy that an emitted photon has is equal to the difference of the "quantized" energy states between which the electron has transition (in your example), making it a "quantum" particle. Don't get too hung up with the nomenclature. Be conceptual.
