It has been ages since I have had Spam, although I admit, it can be tasty when fried. Another fairly easy way to introduce variety is to get a Long Island duckling with orange sauce packaged in the giblets. You don't bother to make real a l'orange, but use the sauce as a condiment on the table. Uncle Ben's Wild Rice, whether original, or something like roasted garlic, goes very well with it. Contrary to what Betty said, if one takes a fork and makes holes on both sides of the breast, say 8 jabbings altogether, and on the wings, say 6 altogether, the fat is mostly expressed into the pan. Although there will be a layer of grease on the back, one doesn't eat that anyway, and one takes the duck out of the pan after it is finished, so as long as one doesn't spill, and has a grease can, it is not so messy. In addition to the Uncle Ben's, cook some broccoli until it is al dente, and then finish by sauteeing it in liberal amounts of butter before serving..........
