Wild ducks aren't stringy. A filet of mallard breast cooked on a grill is a wonder of taste. Wood ducks are also called breakfast duck as a lot of people eat them for breakfast as they are so mild.

We used to butcher tame ducks at 6 weeks as after that they just put on fat. Even at that age we would get a pint of grease off each duckling when cooked on a rotisserie and plenty still left on the bird.
