Southwestern is a very popular cuisine out here. Cajun is like an exotic cousin to South Western. A Cajun restaurant pops up once in a while in some of the progressive cultural hubs. The front range of the Rocky Mtns is booming and the demographics are very dynamic. They are usually popular when they open, but don't make it on the long hall. I love the Cajun seasonings. I had a friend who was from Louisiana a few years ago. She could do amazing things with shrimp.
