Wow!! You should look up William Hueb on SI. Nice guy really into smoking meats and is your neighbor.

I used to do a lot of smoking. Hot and cold. Hot smoked pike and made a fish dip to die for. Hot smoked turkey breasts for sandwiches when we trained dogs.

Used an old brine recipe when we butchered a hog. Had several salmon then also. We brined and and smoked the bacon and salmon never getting the temperature over 60 degrees. Took two months. The bacon was to die for but the salmon.. I kept some for 3 months and it was still great.

Coby, there's a tropical storm off Mexico that's making it 90 degrees and 90% humidity here. The locals are wilting. Just makes me think I'm back in Arlington. But thank God for air conditioning.
