I wanted to do them on the big grill, with charcoal, but found out the bottom was ruined, so it's unusable till it's replaced. Hence, I used the gas grill. I have to make some more, so that I do them better. The trick is to cook them slow, or even if they get done quickly, get the heat low and let them sit in there for awhile. That gets them more tender. And plently of basting.

Oh, also, I basted them then put them in the oven at 250 for 30 minutes before starting to grill them.

It was in the low 80's here today after several days of 100 degrees and a couple of weeks of wicked weather. It made for a great day to sit on the deck.

Buy good ones whether beef or pork. Boil them for 15 minutes and carve off the excess fat. Drain. Cook on a low heat fire for 1 hour while smoking, your choice of wood. Raise heat and burn in the Mujumbo Sauce.
