As promised, here's the recipe that my aunt uses to make cooked salsa. Isn't email wonderful?

PRESERVED SALSA PIQUANTE

Mix in a large pot and simmer for 1 hr:
5 lbs tomatoes, skinned, deseeded, chopped
4 mild green chilis with seeds, chopped
4 jalapeno chilis with seeds, chopped
1 lg Spanish onion, chopped
1 lg green pepper, chopped
1 lg red pepper chopped
3 cloves garlic, chopped
1 - 5 1/2 oz can tomato paste
3/4 c. vinegar
3 T. sugar
1 T. salt
2 t. paprika
Add and simmer another 15 - 30 min. to desired consistency:
3 T. cilantro/coriander, chopped
Fill into sterilized snap top sealers and process for 20 min.

[There it finally is! I do modify it, as I don't want it that piquant. The longer you cook it, the milder it gets. I don't process my jars - just fill them and watch that they vacuum seal. ENJOY!!!!!]
