You are pretty accurate about the general characterization of the position of KC in the world of BBQ, although Virginia and the Carolinas have their own version of shredded pork BBQ that I am rather fond of. I cannot recall if I have encountered The Smoke Stack. My wife grew up between Ward Parkway and State Line, in a fairly modest house in a pretty neighborhood not far from Mission Hills, and besides a venture to try Bryant's, due to its reputation, I have mostly eaten in the southwest part of the city. I do not know how familiar you are with KC, but my wife went to Southwest High School. Ed Sanders, the leader of the Fugs, went there, as did Calvin Trillin, food writer extraordinaire..........
