Yes but you have to remember that butter adds flavor that the oil will not. I will just taste different. The other thing is that butter when it melts adds air to the batter, and melts down to a fraction of its original volume. So you will have to use slightly less oil and mix the batter to see how the consistency of the batter is. It also may take a little longer to bake through as the oil will be a more dense ingredient. So after all this perhaps a better replacement would be a margarine or a low fat butter replacement. There are some great products on the market that are based in a yogurt but will act like a butter when baked. Just a thought.
