I admit, there is something to what you say about the onion. I do not, though, have the palate for chili unprocessed, although they are certainly beautiful in a bouquet........

As long as we are on the subject, I do want to mention that shallots, scallions, and others of that ilk are fine things. Also, I should mention places of honor for celery and carrots, in certain dishes, like chicken soup and pot roast. The more the better. They cook up amazingly well, and have delicate flavors that permeate the dish. And let us bow our heads in reverence for the lowly cucumber, which gives us a vast array of pickles, and teaches us that plainness can be a prelude to decoration......
