Dear Tony: To delicately boil a spud, or egg, put some _cold_ water in the pan, add the potato (or egg), then add more cold water to cover, if necessary. Cover the pot and bring to a boil sloooooooowly, on the low setting if using an electric range, lowest flame if gas. When the water starts to boil, tilt the lid on the top so some of the heat escapes. You want to maintain a gentle rather than rolling boil so your: a.) potato will be cooked with all due respect; or b.) egg shell will not crack.

Do the above to a lobster? No way.

Put the lobster(s) in a large pot. Cover with cold water. Remove the lobsters and bring the water to a *rolling* boil, on high. Put the lobster(s) in the boiling water head first so they do not suffer unduly.

The above is an example of boiling yin and yang.
