Drea! I have a recipe for an Apple Cake. It is served at the Captain Whidbey Inn in Seattle. The Inn may no long be there as I have had this recipe for 20 or so years.

WASHINGTON APPLE CAKE
from Captain Whidbey Inn, Seattle

3 Eggs
2 cups Sugar
1 cup Cooking Oil
2 cups All-Purpose Flour
2 teaspoons Cinnamon
4 cups thinly sliced pared Tart Apples (ex. Granny Smith)
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 teaspoon Vanilla
1 cup chopped Walnuts

Beat Eggs with a mixer until thick and light. Combine Sugar and Oil; pour into Eggs with mixer on medium speed. Stir together Flour, Cinnamon, Soda and Salt; add to Egg mixture with Vanilla; beat to mix. Stir in Walnuts. Spread Apples in a buttered 13 X 9 X 2 in pan. Pour batter over Apples, spreading to cover. bake in a 350 degree oven for 1 hour. Remove from oven and cool. Spread with the following Cream Cheese Icing recipe.

CREAM CHEESE ICING
from Captain Whidbey Inn, Seattle

2-3 oz. packages of Cream Cheese
1/4 cup melted butter
2 cups of Powdered Sugar
1 t. Lemon Juice

Soften Cream Cheese. Beat until fluffy. Beat in Butter; then beat in 2 cups of powdered sugar and 1 t. lemon juice. Spread over cooled cake. Refrigerate. Makes 12 - 15 servings.

This cake is very moist and stays that way.
