My mother never learned to cook "Southern" so I didn't have those foods unless some friend's mother served them to me. The stringy, salty stuff Virginians call ham and take such pride in, we thought was awful! And their idea of roast beef was really strange-- all brown and falling apart; Southerners cook all the GOOD BLOODY STUFF out of their meat! On the other hand, my little Southern friends would gag over the bleeding prime rib at my house and wonder at the sweet juicy pink ham stuck with cloves and pineapples and brown sugar-- which was NOT served on biscuits.

My sister-in-law comes from a good ol' county family, and she can cook up a New Year's Morning breakfast of biscuits and redeye gravy, oysters, and black-eyed peas, that is out of this world. I think good cooks are just good cooks in any language.

No matter how awful their meat is, my valley still has Robert E Lee and great bluegrass music and I consider myself a Virginian. And hey, I finally did develop a taste for grits.

Hominy is corn that has had the skin removed. I heard they soaked it in lye to remove the shin and toughen it up. Grits are hominy that also has the germ removed, dried and ground.
