Thanks so much for the warm wishes. I got so many messages, it made me feel great.
Ya' know I went to a cooking school and got a degree in this stuff. I could tell you the reason you almost never find a recipe for Triffle. SHH.... Its because in restaurants they rarely if ever use fresh ingredients for this. It is one of those trade secrets to cut waste costs. They use the stuff that would have gotten thrown away. Glad ya' know this now right? Now I can't say they all do this, I'm sure there are those very high class places that just don't do anything unless its done right. But......
I have a ton of inside info about restaurant practices that could make your toes curl.
