Blue, one of my daughters-in-law developed something similar. A former Olympic-calibre gymnast, she just all of a sudden swelled up like a balloon, gaining some 40-50 lbs. The doctor put her on a special no sugar diet like yours, and it all rolled right off. Her chronic headaches improved as well.

BTW, there is no such thing as a low-carb veggie. That is what veggies are: they are carbohydrates. What you have in mind are veggies with a low glycemic index. (And even potatoes differ: baked Idahos have a high glycemic index, while boiled new potatoes have a relatively low glycemic index, compared to other "starches.")
