Hey Clappy! While ya in Home Depot ya might check out some of them thar colors of red paint ya might want to repaint ya kitchen when ya get through canning.

Just a thought I had.

What a nice thing to do on the weekend. Nice thing for the kids to see ya doing. I wouldn't think many kids today have witnessed their parents canning. Clappy are you serious? Are you really canning?

Just one more question.

Did you give Drea a bunch of canning jars for her birthday???? :-)

re: tomato sauce

I used to can alot of tomato products when I had a BIG vegetable garden (before I got horses)

This is how I made sauce. You can save ALOT of reduction time by doing this:

Cut stem ends from washed tomatoes. Cut into wedges. Dump into large kettle, cover, and SLOWLY bring to a simmer. DO NOT STIR. Turn off heat, let stand, covered 'till cool. Pour off liquid. Press pulp thru sieve or food mill, which removes the skin and seeds. Voila- nice, thick, tomato sauce. Season, if desired, then bring to boil, pour into hot jars, seal and process in water bath.
