And let's not forget the Cloudy Bay, one of the finest sauv blancs in the world (depending on how it's cooked, this would be a fine accompaniment with lamb, especially if chiles were used).

PS: Yamakita, Japanese aren't supposed to like sheep meat! Quit spoiling the stereotype. [Though you did think that chiles and lamb could go together...sorry, mint sauce is the only permissible accompaniment. I suspect you would be covering the dinkum sheep taste with the chile].
