Well, that is just too weird, becuase a few months ago, I was researching that very thing for one of the characters in my novel, a college professor who was lecturing a Greek chef in a restuarant. DId anyone ever answer?
The toque actually dates back to medieval times.

“You should be wearing a toque, you know,” he said, waving at Mr. Dimoulakis’s bald pate. “One of those tall white hats.”

“I am a Greek, not a fancy-schmancy French poof,” Mr. D. huffed.

“Oh, but you see,” Libby felt herself trying to grow smaller as David’s eyes lit up with his customary educational mode enthusiasm. Did he go through his days, his life, explaining and demonstrating the trivia of the world to all around him while their eyes glazed over in boredom? “You see, that hat was invented by Greek cooks. They wore them to distinguish themselves from the monks in the European monasteries where they, the Greeks, had taken refuge to escape slavery during the Middle Ages so really, it’s the French poof who acquired the style from you!”

He beamed at Mr. D. who left without putting the small plate of baklava, his usual on-the-house- treat for Libby.

“I think you've insulted him,” Libby said, regretfully watching her baklava grow smaller.

David seemed genuinely surprised at this statement. “Really? However would I have done that?”
