You could tell this by taking off the cover, and looking at the markings of the chip inside

This is only true in some cases. If a processor designed for a high speed is a newer stepping than the rest, the markings will tell the story. However, if it is the same stepping, there is nothing that one can look at with a microscope that will tell them apart.

In the case of Rambus memory, there is almost certainly no visible difference between say 600 and 800 parts.

Of course, taking off the cover translates into dissolving off the package in many cases.
