Yes and no :-)

If your application is specifically rewritten to take advantage of multiple threads, then it will run faster on a multiprocessor machine with OS9. Examples of such applications include Photoshop, Adobe After Effects, SoundJam, most of the 3D rendering programs. I also understand from reading the release notes that Quicktime 5.0 will take advantage of multiple processors for decoding/encoding video streams, even under OS 9.0 (haven't confirmed this however).

The base OS9 system toolbox though does not take advantage of multiple processors. For example, if you are running a long Excel macro calculation while you're also repaginating a Word document, the system and both of the applications run only on one processor - the second processor sits there idle.

In these cases (basically any non-graphics intensive tasks), the second processor is just a $500 dongle.
