Ish, all jockeying for position aside, it is a shame that it is too late to file suit to recover your mother-in-law's money.

Relying on SSI and her church is, to me, a pretty clear case of undue influence, she probably wasn't even cautioned to consult an independent attorney.

That type of planning is a big fraud, most people die soon after entering a nursing home, it would probably only have eaten up $30,000 - $50,000 of her assets.
