Your criticism of polls is warranted. A good poll will try and eliminate your objections by changing the order of questions and alternating the wording. But, as you say, they determine what is worthy as a topic of a question and that influences the response. (Isn't that called the "uncertainty principle" in physics?)

I believe the biggest error in polls (except exit polls) is that they don't know who will vote. People polled generally are quite confident they will vote while we know that turnouts are usually much less. I believe this will favor Bush in the election as his supporters are much more enthusiastic than Gore's.
