Perhaps it best to ask the docs around here, but perhaps

1. it's mind over matter, or
2. what causes the headaches is something in the skin of the grapes. To make zinfandel white the skins are removed immediately after pressing - it's the skins/stems that are largely responsible for the deep color.

Freeus, maybe its the tannins that are causing your headaches. I'm pretty sure there are more tannins in red wines and less in whites/blushes.

It most likely has to do with the histamines on the skin of the grape that is accumulated from the hands of pickers. With the white zinfandels the skin is removed sooner.
