Chocolate Angle Food Cake
Nothing with no fat was ever this good. Try it with a little kahlua drizzled over the top.

1/4 cup unsweetened cocoa powder
1/4 cup hot strong coffee (chocolate almond is best)
1 1/4 cups sugar
3/4 cup sifted cake flour
12 egg whites
1 tsp cream of tartar

Preheat oven to 350 degrees. Dissolve the cocoa in the hot coffee and allow to cool.

Sift together the sugar, flour and salt. Set aside.

Beat the egg whites until frothy. Add the cream of tartar and whip on high speed until stiff. Fold the flour mixture into the whites one third at a time.

Combine one third of the egg white mixture with the coffee and cocoa mixture. Fold this mixture back into the rest of the egg whites, mixing gently.

Pour the batter into an ungreased tube pan. Remove air bubbles in the batter by pulling a knife around the pan.

Bake at 350 degrees for 50 to 60 minutes. Cake will crack on the top and cracks should feel dry and spring back lightly when touched.

Cook the cake upside-down in the pan on a funnel or bottle so that the cake does not touch the counter. Run a knife around the pan to loosen the cake.
