The document that I used to start learning Linux were the howtos linux.org has pointers to documentation and faqs. The default install of linux has the ability to be file, mail, print server .... What you need to do is have ethernet cards and cabling to create the network. For more than two systems you will also need a network hub. I assume you will do 10/100base-t and not thin wire. There are howto's that expain it all.
