Since we are on the subject of oysters...here is one of my very favorite Holiday cheese balls...

Smoked Oyster Cheese Ball

1 jar Neufchatel cheese with bacon
1 jar Neufchatel cheese with pimento
2 (3 oz.) pkg. Cream cheese
2 c. sharp Cheddar cheese, grated
1 can smoked oysters, drained, rinsed and minced. (I prefer to use 2 cans)
Dash of garlic salt or powder
2-3 pieces lean crisp bacon, crumbled (may substitute with real bacon bits)
chopped pecans and/or parsley

Soften all cheeses, and then mix with oysters and garlic salt or powder. Add bacon and blend well. Form loosely into a ball in a bowl. Cover and refrigerate until almost firm. Divide in ½. Form each ½ into a ball and roll in chopped pecans and/or parsley to cover. Wrap tightly in plastic wrap and refrigerate. Remove to room temperature 1 hour before serving. Makes 2 nice cheese balls.
