I don't eat iceberg lettuce anyway. Wages and the supply of labor will reach equilibrium. If a lettuce grower cannot pay a wage high enough to pick that head of lettuce, he will plant a crop that does not require the labor. Or, a technological means of picking it will be created to solve the problem. In effect, the illegal person picking the lettuce is a form of subsidy for an activity that in a free market, might not occur. If they can't pay enough for people to pick the lettuce in California, the lettuce may stop being grown in Calif, and we might be importing more lettuce from Mexico, which would help the economy down there anyway. The absurd thing is, you want to save a couple cents on a head of lettuce, but don't realize that your health care bills and taxes for more police, schools, and teachers are higher to make up for the silly head of lettuce.
