Actually, griffins are symbolic of the solstices... the "highs" and the "lows" of the year, one could say: ...the constellations of Leo [the lion] and Aquila [the eagle]...were chosen to symbolize the summer and winter solstices... Emmeline Plunkett, Calendars and Constellations of the Ancient World Actually, Bland read some other fascinating comments on the symbolism of griffins just last weekend but he cannot remember exactly which of several books he was reading that he found them in, and so cannot locate the exact reference.
