Harvest Stuffing

1 cup shredded carrots
1 cup chopped celery
1/2 cup chopped onion
1/2 cup margarine or butter
1/4 teaspoon ground nutmeg
8 cups dry bread cubes
2 cups finely chopped, peeled, apple
1/2 cup chopped walnuts
1/4 cup toasted wheat germ
1/2 to 1 cup chicken broth

In a large skillet cook carrots, celery, and onion in the butter until tender. Stir in nutmeg, some salt, and pepper. In a bowl combine the cubed bread, apple, walnuts, and wheat germ. Add carrot mixture. Mix together. Drizzle with enough of the broth to moisten, toss lightly. Bake covered in a casserole dish for 40 to 45 minutes in a 325 degree oven.
