Employee's mood is swing in sync with stock market these days as it has become such big part of their income. In silicon valley, it's no option no talk. Even a summer interim wants option instead of salary. :)
When a market drops like we have now, I expect many employee(normal engineers or top executives) "reposition" themselves for the next wave.

re "What happens when stock options have been removed to employee morale?" A few will leave, but most employees are more concerned with feeling good about the work they do, being respected and treated well in their day-to-day dealings, etc.
