Under Florida law they could have brought on extra help, which is why the argument that "seven days is not enough" is invalid.

No, it's still not practical. Remember, any disputed ballots must go through the original canvassing boards, so they are a bottleneck.

I think the original idea (if there was one), was that the Secretary of State would allow amended returns for any reasonable manual recount. Of course, with this Secretary of State that idea goes out the window.
