I've heard various opinions on that. I did eat some bear 45 years ago and since I can't remember how my Big Mac tasted at lunch I sure have no opinion on bear. It's a dark meat like horse.

A lot would depend on what the bear had been eating. Early settlers depended on eating bear. Deer and small game didn't have enough fat to sustain them through winter. Jack rabbits are considered unfit to eat. I fried one and that way they are. Ground up and made into salami they are great. Check the net for recipies.
